Max's Group CEO talks about dealing with 'new normal'

Max's Group president and chief executive officer Robert Trota admitted that the COVID-19 crisis "became more than what we expected," with his team pushed to do things "that they were not ready to do, or equipped to do."

In a webinar organized by the Philippine Franchise Association on Thursday,Max's Group CEO talks about dealing with 'new normal'.

"We had to take care of our people, preserve our inventory, move things around, and go into shutdown mode which is not normal," said Trota, who was one of the panelists in the webinar. "Because we usually celebrate openings, not closings."

"The question we had was, what will happen to the employees once all the stores are closed? So those things had to be taken care of," he added. "Max's has been here for 75 years. We had to pause and reflect again.

"While Trota stressed the importance of taking "two steps back" to reassess the situation, he also reminded entrepreneurs to act swiftly to avoid further losses.

With dine-in prohibited because of the pandemic, Max's Group focused all of its operations and resources on takeout and delivery.

"Today, I'm happy to say that I may not have recovered 70% of my dine-in, but I definitely doubled and even tripled what I do in delivery and takeout," he said.

"I rechanneled everything into that platform, whether it's the website, my call center, delivery riders, operations people. Everybody's focused."

So what did the Max's Group to make up for the lost dine-in sales?

"We created ready-to-cook meals... then we also have ready-to-eat meals," he added. "You have to create new channels... Dine-in is not gonna come back overnight. It will take time," Trota said.

Max's Group includes Max's Restaurant, Pancake House, Krispy Kreme, Jamba Juice, Yellow Cab, Teriyaki Boy, Dencio's, and Sizzlin' Steak, among others.Trota stressed the importance of having a sense of urgency in dealing with the "new normal" to be able to "succeed in a market as tough as this."

"We're not going to be the same anymore as prior to COVID," he said. "

You're not going to get your sales back overnight, so you need to work on what you can achieve."

Sarap-In-A-Bun: Savor Max’s All-Time Favorite Chicken, Now In A Sandwich

Max’s Restaurant has done it again with a classic reinvention of its all-time favorite Sarap-To-The-Bones® fried chicken: introducing Max’s Fried Chicken Sandwich!

The classic Max’s fried chicken is undoubtedly well-loved by Filipinos across all generations. Although, not a lot of people know that the truly original way that this Filipino classic was first consumed all the way back in 1945 was with fresh, hot rolls on the side. As a throwback to its roots, you can now treat your taste buds to a Sarap-In-A-Bun chicken sandwich.

What’s inside?

A filleted version of Max’s iconic juicy, no-frills fried chicken seasoned and spiced the signature Max’s way. Now, it wouldn’t be a true Max’s experience without the trademark blend of banana ketchup and Worcestershire sauce, and that’s what’s drizzled over the chicken meat to add tang. Pickled cucumbers and shredded cabbage are then generously spread from top to bottom in between two buttery brioche buns to complete this flavorful and filling experience.

“Creatively re-engineering our Sarap-To-The-Bones® fried chicken to a sandwich puts us forward in providing our customers with more delightful ways to feast over classic local dishes that have stood the test of time,” says Max’s Restaurant Head Culinary R&D Chef Adrian Azurin.

“It’s Sarap-In-A-Bun, literally, with our hero fried chicken, now in a format that’s perfect for today’s adventurous, mobile consumers. We specially curated the blend of banana ketchup and Worcestershire sauce to stay true to the authentic Max’s experience. The pickled cucumbers are not something usually associated with our fried chicken, but we love how their tartness makes each bit surprisingly fresh and zesty.”

With the new Max’s fried chicken sandwich, you’ll be surprised by just how filling one bite can be. It’s also served with a side of Max’s sweet potato fries and a garlic mayo dip, making it even more satisfying for every diner’s appetites.

“Just one plate is an explosion of flavors. We’re proud to turn an everyday snack into every diner’s main course with the perfect meat-to-bun ratio, and toppings and condiments that make the whole dish shine,” adds Chef Adrian.

For 75 years, Max’s has continuously catered to the changing appetites of its diners with its product innovations, while also staying true to its culinary heritage built on Filipino values.

“Since 1945, Max’s has become the tradition and institution that it’s known to be now because of our founders Maximo Gimenez and Ruby Trota’s humble beginnings of befriending American occupation troops stationed in Quezon City and serving our Sarap-To-The-Bones® fried chicken with hot, fresh dinner rolls,” says Max’s Restaurant Marketing Director Mark De Joya.

“Our new fried chicken sandwich is a loving, respectful tribute to that. We believe this demonstrates the ability of our brand to balance both its history and heritage with new formats, flavors, and experiences that make Max’s forever relevant across generations.”

Indeed, everyone will come running to their nearest store and savor a massive bite of Max’s Fried Chicken Sandwich, available starting March 9 for only PHP249.

Tess Laus and Max's Group Grow Successful Provincial Franchise in Pampanga

Tess Laus of San Fernando, Pampanga felt a sense of responsibility to help her province recover after it was devastated by the cataclysmic eruption of Mt. Pinatubo more than 20 years ago, leaving thousands homeless and hundreds of businesses destroyed. The opportunity to do so came when her husband, Levy met with the father of Robert F. Trota, President and CEO of Max’s Group, Inc. (MGI) to discuss the company’s plans to expand through franchising. It was an easy decision for the couple as they saw that there was much potential in working with MGI, especially in helping them achieve their goals of rehabilitating Pampanga.

“When Robert’s father said that they were opening Max’s to franchising, we jumped on the opportunity. The first location we had in mind was the old Villa del Sol branch in San Fernando, and it took us about two months to rehabilitate the store since it was destroyed by lahar,” Tess Laus shares. “We really wanted the Kapampangans to get excited again with the opening of Max’s Restaurant, as we want them to have a place where they can all feel at home and enjoy delicious, real food with loved ones.”

Tess Laus and her husband truly appreciated how Max’s and MGI have always placed tremendous importance on quality assurance for both food and service, and the commitment they have in ensuring that franchisees did the same. As their store reached greater success, the Lauses opened three more Max’s Restaurant branches: one in Cabanatuan, another in Clark, and one more branch in San Fernando, this time in SM City Pampanga.

When MGI expanded its portfolio with the acquisition of the Pancake House Group, the Lauses did not hesitate to get on board, opening two Pancake House branches, one Yellow Cab, and one Dencio’s all within the span of eight months, October 2017 to June 2018.

This year, MGI is focusing on a franchising-led business model to drive expansion and improve accessibility. By franchising its core brands with partners such as the Lauses, the move will leverage on Max’s Group’s brand equity, operational expertise, and scale to propel store network expansion and bring its loved brands closer to more customers.

Max’s Group partners with GCash on e-payment via QR Codes

Max’s Group, Inc. (MGI), the largest casual dining company in the Philippines, has partnered with GCash, the pioneer in electronic payments using QR codes, to help jumpstart the country’s move into a cashless ecosystem.
MGI is composed of Max’s, Pancake House, Krispy Kreme, Jamba Juice, Yellow Cab, Teriyaki Boy, Dencio’s, Maple, Singkit, Kabisera, Sizzlin’ Steak, and Le Coure de France.
“I think there is a great opportunity for us to address the consumer needs especially the phone as a wallet since there is a great amount of convenience that comes with that,” said Sharon Fuentebella, Chairman and Chief Executive Officer of MGI.

Dave Fuentebella, MGI Chief Financial Officer added: “find the use of GCash scan to pay feature to be seamless so we are anticipating that it will grow as more customers use this payment gateway facility. We’re excited to see how this will evolve. Right now, we are very happy with how GCash is being used. We’re just waiting for it to be rolled out in all our stores for other consumers to experience it as well.”

The GCash scan to pay feature will be available in at least 50 stores across MGI’s network by the end of November, with more stores slated to rollout the service in 2018.

GCash pioneered in the Philippines the use of the reversed QR payments via smartphone, a move which is expected to change the landscape of how Filipinos usually pay for their purchases.

Through the scan to pay feature of the GCash App, customers can use their GCash account to pay for goods and services by simply scanning QR codes displayed by merchants and establishments. For the consumers, this eliminates the hassle of bringing money, waiting for change, or getting into misunderstandings over payments. Merchants, on the other hand, would no longer need expensive machines to process mobile money transactions but only QR stickers with a unique code that is linked to their GCash wallet.

Albert Tinio, GCash President and CEO, on the other hand, welcomed Max’s Group to the fold of early adopters of e-payment, particularly the scan to pay feature of the GCash App.
“We are glad to see a big restaurant chain like Max’s embracing the future of e-payments in the Philippines. QR scanning via mobile phone as a mode of payment is already widely-accepted in China, India and other countries in Asia and we want to replicate its success here through the help of our partners like Max’s Group,” he said.

By making QR codes available to anyone, even to ambulant vendors and sari-sari store owners, GCash will be paving the way for a cashless society which means faster, more convenient, and secure transactions for both merchants and consumers.

Its introduction is in line with the thrust of GCash investors – Globe Telecom, Ant Financial, and Ayala Corporation, to accelerate financial inclusion and upgrade payment services in the Philippines.
